Apple's iPhone has currently 2 iOS updates : iOS 17.7 and iOS 18.0.1
iTunes present only iOS 18.0.1 and not both updates.
Is there a way to display both updates ?

I am not sure why you can't do it from iTunes, but..
you can do it directly from your phone without iTunes involved.
(It is how I always upgrade)
Make sure you plug in first, and have a good level of charge on your phone before you start...
Got to Settings --> Software update available: It will offer you 18.0.1
BUT if you hit the "BACK" icon in upper left corner of screen
you are then offered 17.7
