GarageBand - Settings: Enable Audio Units - Why is this greyed out? How can I reactivate it?

I'm trying to activate a VST in GarageBand, but it won't play. I have checked the settings and noticed that "Enable Audio Units" is greyed out and therefore I cannot activate the VST.

I have successfully used the VST before, I don't understand why suddenly it won't allow me to activate Audio Units.

Garageband audio settings keep switching Every few minutes, my Garageband audio settings automatically switch to either "Zoom" or "Microsoft Teams" or some other setting. I switch it back manually to my computer speakers (or "system settings") , which works for anywhere between 2 and 20 minutes, and then it just goes back to one of the other settings. Any ideas how to stop that from happening?
