The newest fun part: with the latest update the network connections with enabled Firewall are stable, but if you backup your Mac with TimeMachine to a NAS device, the backup is no longer working. Stops between 200 and 400MB.

I back up to a Synology NAS using Time Machine and it worked yesterday and not today after 15.0.1 update

Mine gets to 0MB. But with a film playing off the same NAS during backup gets to 95 MB then goes to 'skipping'

Had the same. I used the hosts file which was not the best idea. Switched to proper DNS server access to the NAS via SMB works again.
Not using hosts file or so. In my case also proper DNS. As said, before upgrade to 15.0.1 everything was working perfectly.
Weird, what's the nslookup output?
I updated DNS and then it was working fine, try that. Good approach: check you nslookup result in the terminal.

I would try it with the Firewall turned off if you haven't already tried it.

I added the NAS in the hosts file. It didn't solve the problem.

That won't solve the problem: you need to have a DNS server in your local network and add an entry. Otherwise try connecting via IP address, that skips the DNS resolution part.
