The question pretty much details itself.
Sometimes, when inserting a value into any given cell, I want a slash symbol to stay a slash.
Example: 30/20. I need the slash to remain as it is, but when I leave the cell, it converts it to 1 1/2.
Assume there is an override, even if just for individual cells, but I don't know it.

If you don't need a numeric value in the cell then you can select the cell and set the Data Format to Text (you do that via Format > Cell pane and choosing 'Text' from the Data Format dropdown) and then enter what you want.
Or if you don't want to set the format first you can just type an ' (an apostrophe) followed by what you want.
Typing '30/20 will result in 30/20.
