How to change child Apple ID when using Family Sharing?

my child has no dedicated device she uses

my child can login to our MacBook Pro as a user

we need to change my child's apple ID to a different email address

I logged in as the child to appleid.apple.com but do not see any "change Apple ID" options.

I have the "email & phone numbers" in the "Sign-in & Security" section but that's it.

when I click on "email & phone numbers" there is only an option to add more email addresses. I did this, hoping I would be presented with an option to use it as a new Apple ID - but I was disappointed with no option.

I see no option to change the Apple ID.

any specific guidance on how to do this would be appreciated.

as mentioned, I need to do this via the web as the child does not have a device allocated to them (other than their own HomePod mini). I am the organizer and can login without issue and when needed.
