My problem is so simple/stupid and I'm embarrassed asking for help. I haven't used my MacBook for a year. I'm in Pages. Everything is set except for setting my letter size.

Letter size and font size are two different issues. When you click on the text of your document in Pages, the Format > Text sidebar appears with clearly visible means to select font and font size.
When you want to create a new document from available blank or predefined templates you select that from the Template Chooser, either on the initial launch of Pages or from the Pages File menu > New… menu item.
