Apple Music, Album Art associations blown up when synch/unsynch phone to library (Windows PC, iPhone 15)

Album art totally messed up on 80% of my library when synched and had to unsynch phone from Apple Music/iTunes - why does this happen, more importantly is there a easy fix for this or must I (as I had to a couple of years ago when faced with the same issue) go back and repair each song on each playlist with the correct album art?
