I'm looking to upgrade my iPod touch 4 to a Touch 5 due to the iOS 6 app store shutting down and my iPod running out of space for music, I can't afford the 6th/7th gen touch, I am going to buy one anyway but I'm just wondering how useable it is

For music playback it will be fine. For Apps, not so much. A 5th gen iPod Touch cannot update past iOS 9, and most current apps will likely require 12 or later.
If you need access to apps, then the 5th generation is not going to cut it and you will likely find yourself in the same boat in short order.
