I have an AKAI Professional MPKminiplay MIDI keyboard, that i use in GarageBand.
But the sustain pedal i connect to my keyboard is not recognized as sustain by GarageBand 10.4.11, but as another characteristic: slow-fast.
How can i map what i want my midi keyboard keys to do in GarageBand?

Assuming that the software instrument in GB even responds to a sustain pedal, you have to re-map the controller number on your keyboard to match Garageband's.
The manual for the IK Multimedia Keys IO says that the sustain controller for GB is 64:
