Pair kids Apple Watch with my phone for monitoring but they also have phone

I got my kid an Apple Watch and iPhone. I set up their Apple Watch using their phone but now I’m unable to monitor the watch from my phone to set up school hours.

Do I need to set up their Apple Watch from just my phone to monitor? How do I keep their watch connected to their iPhone but monitor from my phone. Thank you
