I had a three page Home Screen with neatly ordered folders each containing my carefully sorted apps and now, maybe following the recent update to iOS17.5.1 I can only see a single home page and when I swipe right I get the dreaded App Library with all my apps in a completely different structure/order. It's driving me nuts. How do I get back to MY home pages structure??

Go to Settings>Focus and make sure that none of your Focuses have settings for Home Screens.
I have not seen any reports here about the update resetting your Home Screens, but it is possible to reset the home screens on your device. I assume you did not do this yourself, but anyone that knows your passcode can do it. It is done by simply going to Settings > General > Transfer or Reset iPhone > Reset > Reset Home Screen Layout.
Since iOS 17.5.1 was released back in May, I would suspect this happened some time after the update. If you have an iCloud backup before your Home Screens were reset, then a restore will bring back your original Home Screens.
If I shutdown and reboot it returns to normal for a period until I do something and then it reverts to the App Library if a swipe left. The second and third pages of the Home Screen (as it were) are still there but I can't get to them.... it goes straight to the App Library. Its bizarre. Why can't I just turn the App Library off?
