Gotcha. There's no way to have it automatically default to the boot selector screen, but you can set a different default startup disk if you want by going to System Preferences > Startup Disk, then unlocking the pane with the lock on the bottom left, then choosing the disk and 'Restart'. The chosen disk will now be the default when starting up.

No, changing the partition name could easily render it unusable. Is there a reason you want to change it?
