Is it possible to pair Apple Watch SE with iPhone 8 Plus? I have done latest update on the phone and it still telling me I can’t. The whole reason I purchased was because I read that I could pair with iPhone 8 Plus and now I have this issue.

If the watchOS has been updated to WatchOS 10 or above it will not be able to pair with the iPhone 8 Plus because that iPhone can not update to iOS 17 which WatchOS 10 requires. Up until WatchOS 10 the SE and any Watch prior to the 9 series and Ultra 2 was indeed able to pair to an iPhone 8 Plus.
Only if the watch is on an OS version below 10.0.
