I noticed that Apple Watch Ultra 2 Model A2986 is the model sold in the USA as well as in Israel (and the EU). If this is now the case, is there still a reason why one could not purchase in the USA and set up eSIMs in Israel (or the EU)? There is no indication that different bandwidths are supported by different versions of this model.

Your wording is unclear, but just to be sure, you MUST have an iPhone XS or newer that you will pair to your Apple Watch and share the phone number.
