Weather widget on lates Apple Watch upgrade is unreadable

upgraded to 10.1.1 and the new weather widget is unreadable during the daytime. It is white numbers on light blue background, versus white on black before and now it is completely useless to me. How to I switch back to the previous software? Or can I change the background, it seems to be mimicking the weather, ugh. I don’t like all the other changes either but the weather one make that widget completely useless for me.
