Mac mini M2 pro poor performance

I am about 5 months into using my Mac mini M2 16gigs of ram and I am finding it underwhelming. Barely handles even simple video editing tasks without lag. I have been using Macs for 30 years and something is just not right with these M2 chips and editing video or maybe it is the way they interact with Adobe products? Maybe I should have gotten 32 gigs of RAM? Not sure. I used the rotobrush in AE on a 1080 clip, which I know is a resource heavy task, but even with nothing else open, not even a browser, it was unable to process the clip. Photography is great, Lightroom is fast and stable. Video slow buggy and crashes.
