the Health app is whining about audio levels, but I'm actually playing podcasts in my car! How can I delete this section. It is not applicable...

You can’t delete the Headphone Audio Section in the Health app but you can stop it from whining you. Simply, Open the Health App, Tap the Browse tab, then tap Hearing, Tap Headphone Notifications and turn it off from there. If you don’t want any notifications from the Health app, turn off notifications from Health in Settings.
Well, I DO want notifications, just not that one.....
I am generally listening to podcasts in my car. I rarely use headphones, so this notification is not applicable.
The rest of them are useful.

Is your phone connecting to your car through Bluetooth? If so, go to Settings>Bluetooth and find your car system and change the device type to "Car Stereo".
Here is how to turn off all notifications from the Health app.
