Language Bug between SONOMA 14.0 and Safari

We just uploaded Mac Sonoma OS 14.0 but I have't found anything on the chat boards so far that address this problem -- so far it's happening when accessing Facebook (screenshot below), LinkedIn, Reddit (and probably more to come)...

All posted text language besides headlines on these sites are scrambled - even when typing new content; I've tried language settings on each site, region, language on system preferences in both Mac & Safari browser, keyboard settings, restarted multiple times... no luck. One suggestion for a similar problem was reinstalling all three SF fonts and the New York font from the Developer site, restarted again.

Out of ideas - I'm open to yours / thanks.
