I just bought 200gb storage but still saying not enough space

The update screen is referring to device storage, not iCloud storage. If you don't have enough storage for an update, see here: If you need more space for an update on your iPhone, iPad, or iPod touch

Note that you cannot upgrade device storage without buying a new device.

iCloud storage upgrades don't add to the unit's internal capacity. Delete or offload content from it, or update it from a computer.

You bought iCloud storage. That does not give you more storage on your physical iPhone. You can not get more storage on the phone than it came with when purchased. You will need to free up storage on your iPhone by deleting some of its stored data.
