I also came to the conclusion that there is only ONE model of the Apple Watch Ultra 2 and it should work all over the place... You have it running on the UK network but may I ask whether you bought it in the States or in the UK?

Yes, that's what that support document suggests. The model is the same for both countries, and if you have enabled International roaming it should work.

I will give it a shot and get an Ultra 2 in Canada to then activate it with EE in the UK… it should work just fine as per my understanding.

Yes it works perfectly fine with EE.

I purchased my Ultra 2 in Canada and activated the UK EE sim on it without further issues.
