I usually update my MacBook and iPhone using cellular through personal hotspot by the usb cable as my wifi connection is very unstable. My new iPhone isn’t updating on wifi and it gets stuck. So I thought of recovery mode. But the thing is if I connect my wifi to my Mac while installing the update on my phone, it has a chance of failure. So, is it possible to connect my two iPhones to my MacBook using usb cable?

iPhone SE 1st Gen was released on 21 March 2016 and iPhone 7 on 16 September 2016. Just for your info.
If you disable WiFi and start the iOS update you will see screenshots 2 & 3 asking for the Continue option. Else it will seek confirmation from you on whether to use Mobiel Data or not.
