Should we add the ability to customise emoji icons and add it to the keyboard as an image? Perhaps when you have an emoji keyboard, one day it may be possible to use an image from your phone as an icon for an emoji icon on the emoji keyboard. This would benefit a lot of people. :D This should be for iPhone on iOS 16.6-16.7

Emojis are managed by the Unicode Consortium, not Apple. You can use images, but emojis must follow a standard to be viewable by others.
