Deleted notes can be restored from your iPhone, iTunes backup and iCloud. The easiest way is iCloud if you have enabled note sync.

If you don't have backup, then follow this guide to recover deleted notes directly from iPhone:

Note: Always backup your iPhone to avoid data lost in future!

The ability to retrieve a deleted note from the "Recently Deleted" folder depends on the application or platform you're using to manage your notes. Different applications and platforms have varying policies and features when it comes to recovering deleted items. Here's how it generally works on popular platforms: Apple Notes (iOS/macOS): In Apple Notes, notes that you delete are initially moved to the "Recently Deleted" folder. These notes remain there for 30 days before they are permanently deleted. During this 30-day period, you can easily restore deleted notes by following these steps: Open the Notes app. Tap the "Back" arrow to navigate to the Folders view. Scroll down and tap "Recently Deleted." Find the note you want to recover, swipe left on it, and tap "Recover.

Using a data recovery tool can sometimes help you retrieve notes or files that were deleted—even from the "Recently Deleted" folder—depending on how the data was managed and stored on your device. These tools work by scanning your device's storage to find remnants of deleted files that haven't yet been overwritten by new data.

There are several reputable data recovery programs available for both Windows and Mac, such as Recuva (for Windows) and Disk Drill or FoneLab for iPhone (for both Windows and Mac). These tools often come in both free and paid versions, with the paid versions offering more features.

Data recovery tools were useful when dealing with HDD drives as the directory on those drives were just marked as "available" when a file is deleted. In those cases you could rebuild the directory to point back to the deleted file.

With iPhones, they do not have HDD drives and use NAND/Flash drives for storage. The data on these drives are quickly overwritten. The legitimacy of any Data Recovery company is difficult to determine as many will have paid reviews that of course claim all of their data was recovered. Many have paid money to these companies only to find that the service did not work. It would be irresponsible to recommend any of these companies unless you simply have money to throw away.

The original poster posted back in August of last year. I suspect everything has been overwritten.
