I am using a Macbook air and an Epsom wifi ET-2810 printer. It is printing programming language instead of text for any document I send for printing. Why and how can I fix it?

Hi,

As John Galt indicated, the Epson L3250 model does not appear to support Apple's AirPrint technology (for example, the L3260 does).

This means that printer drivers appropriate for your macOS version would be needed. You may want to have a look at Epsons support page for the L3250. It may also be worth checking whether the printer in question has the latest firmware.
