I have an entire series purchased from iTunes that I can no longer play in Up Next. A thumbnail of the episode appears but when I click it it brings up a screen asking me to subscribe to Paramount+ i have to go to my library each time to select an episode. Frustrating. Please fix.

If you haven't done so yet, restart your Apple TV. Although simple, this step can help correct some unexpected issues. It's also a good idea to make sure your Apple TV is running the latest tvOS version, since this can help with overall performance.

1. Go to Settings > System > Software Updates and select Update Software.
2. If there's an update, select Download and Install.
3. Wait for your Apple TV to download the update. Keep your Apple TV connected and plugged in to power until the update is complete.
After the update downloads, your Apple TV will restart, prepare the update, then install it. When the update is complete, your Apple TV will automatically restart again.

I tried that and clicking “tv” on the details page just prompts me to buy the series again--it's the same apple ID. It doesn't recognize that I own the series unless i select it directly from Library. It's not just Paramount+, it's a series now on Peacock too, and now will default to Peacock for Up Next. This is so lame. Such an oversight on the developers part or it's a known issue and deprioritized because there's no revenue in fixing it.
Try removing the show from Up Next (click-and-hold, then choose Remove).
Then add it back to Up Next from the Store tab, Library tab, or Search tab.
On the Details page for the show, under How to Watch, verify that “tv” is selected as preferred content provider.
I have exactly the same issue. TV series played from Library shows in "Up Next" but when I go to continue, it diverts me to Paramount +. I have removed paramount+ from the Apple TV and instructed Apple TV not to show Paramount+ shows in the settings, but it still gets hijacked to Paramount+. Try finding the right episode in the library a few seasons in. I cant think of a more useless interface for purchased videos after many loyal years to Apple.
The only solution I can think of is to only buy shows from Amazon Prime. They have the same purchase options but you will be able to continue series and movie watching through either the Amazon Prime app or Up Next, which doesnt get hijacked. Apple definitely dropped the ball on this one and this is a symptom of the post Steve Jobs era. Back then, he would never have accepted such shambles .
