I issued my son $32 which he was supposed to pay me the next day. And he did and I tried paying with it at McDonald’s and it said it only had $2 so where’s the rest of my money $30???

You can check your transactions to see what money has gone in and come out:
See your Apple Cash transactions - Apple Support
You can also check if money was transferred, by checking your card-provider statements:
