I am trying to pair a new apple watch but when I start to pair it, it automatically syncs to my ex husband's email that I haven't used for 5 years. I have my own apple id on all of my devices with my own email. It won't allow me to change the email it just wants me to put the password in to the wrong email. I can't go to "my watch " to adjust it because it needs to be paired first. Any thoughts?

You seem to have run into Activation Lock, suggesting that the watch is linked to your ex-husband's Apple ID and is not "new". You will see from this Apple support document that it can only be released by the owner who set the original lock.
