I just purchased a new HP Envy 6000e all-in-one printer. I followed the set-up instructions, and added the printer on my mac.
I am trying to print a JPG image from preview, but when I do so, I am only able to print in greyscale, and there is no option to change it to color.
I've tried disconnecting and reconnecting the printer. It seems to be able to print in color directly from photoshop, but not from Preview

Command P opens the print dialog— makes some changes
Your interface maybe different, poke around
in the add-A-Printer dialog, (you can add as many as you like, even the same physical printer)
Select your physical Printer from the list, then Pause for up to a minute while MacOS selects a Driver:
in the USE box, you want to see the HP Driver for this specific model printer, NOT the AirPrint driver.

Your multiple screenshots the image appear to be black & white—how do you expect to print color?
Try an image that is not B&W and compare your results.
Are you running Ventura(?)— You did not say what macOS.
I suspect your interface would be different....
Look at presets.
wait, you may be using the AirPrint non-Driver.
That non-Driver has limited capabilities. Be sure to install a printer Queue with the Full Driver provided by HP, which may be required to use features such as two-sided, collated, paper trays, COLOR and similar.
I'm not sure exactly how to go about doing what you're suggesting.
When I installed the printer I followed the exact instructions that came with my HP printer, and I don't know what else I should be doing differently.
I have both color and black-and-white printers on my network. when I select a black-and white Printer, the Print-Preview window in the Print dialog is in black-and-white.
when I select a color-capable Printer, the Print-Preview window in the Print dialog is in Living Color.
this suggests your Mac does not agree you have a color printer Driver installed.
¿were you able to install the printer firmware update from the HP web site?
Sometimes they send firmware updates for trivial issues like "doesn't work at all"
Of course I understand how to open the print dialogue window, but that option of "print in color" does not appear
When I do that, it comes up with the HP ENVY 6000 series-AirPrint
Which is exactly what I did the first time I added the printer
The image is NOT a black and white image, but when it appears in the print dialogue in Preview it shows in grayscale and prints in grayscale. The image itself is in full color

I never had a problem. If the document contains color and the printer is set to print color ... colors print.

I had exactly the same problem. The print preview of a color image came up as B+W and no "print in color" option existed. Solved by disconnecting then reconnecting the new printer.
are you using the AirPrint driver?
