If I’m a part of a family subscription for iCloud , how can I initiate an iCloud backup of my iPhone? I’m not able to see see it under my profile and the organizer can’t see my device’s iCloud settings on their side either

In addition to being in Family Sharing, the iCloud storage plan needs to be shared. See instructions in Share iCloud+ with your family - Apple Support
Once that is done, you continue to access iCloud by using your own Apple ID in the same way as if you were not using a shared plan. You do a backup in the same way as always. See: How to back up your iPhone or iPad with iCloud - Apple Support
