All of my emails from my iCloud account have vanished. I did not delete them, they are not in my trash or archive. New messages are arriving but 1000s are just not there! How can I recover them? Please help

I had a senior tech try to
help me find my emails. This is the second time in recent three months when my emails have disappeared off my iPhone and Mac mini. Your tech was no help. I wanted to change my email and he said, it’s impossible. I have had my email since I have been on apple and need to change it. Where do I go for help. The tech said it was too involved to change.
