Slightly bizarre fault. Our Apple TV works fine with our sound bar when using any app except Apple TV itself. Ie: if we try to play a show from the Apple TV app there is no sound.
it is not the connection to the sound bar as BBC iPlayer or Amazon prime work fine through the Apple TV box.
sound bar is connected via optical cable from tv.
Do you have the Apple TV box set to audio format Dolby Digital 5.1 or Stereo 2.0? Other formats wouldn’t be supported for optical cables, although you might not notice for stereo sources.

This is happening to me too.
Apple TV app works fine. So does Netflix.
paramount, Disney, kayo, 7plus all stopped working.
tried updating to Dolby or stereo and neither option fixes it.
was working fine on Disney yesterday. So weird.
Did you find an answer? Mine isn’t working all of a sudden with Disney, but works with BBC and others. Can’t hear clicks when scrolling through Apple TV homepage and can’t adjust volume with Siri Remote. Was working fine before.
