Docs going to iCloud

How do I stop my Mac docs from being synched and going to iCloud? You can imagine my shock when searching for a document and nothing is there - only to see iCloud pop up.

MacBook, macOS 12.6

Apparently you have set up your Desktop and Documents Folders to reside on iCloud Drive. Turn that off if you wish.
