My iPhone 12 is showing the year as 2566BE.

Go to Settings>General>Language & Region>Calendar and make sure "Gregorian" is selected. I bet you have it set to Buddhist.

It's one of those really weird problems that, until someone tells you the answer, it's almost impossible to figure out. Unless you're a Buddhist, I guess.
