when i reply to emails or even open mail settings everything is horizontal and I have to drag the screen multiple times to be able to see the end of the settings options or the end of the email, how can I fix this?

I might suspect you have a signature that is setting this width...
try that Setting and delete all the signature and compare your results.
Quit Mail.app relaunch the app holding the Shift key and compare your results.
