It is not possible to "undo" an update or downgrade back to an earlier iOS version.
If you haven't updated your iPhone yet, you can find the iOS Update file here Settings → General → iPhone Storage, it should be somewhere at the top of the list. Tap in and delete it.
After that go to Settings → General → Software Update → Automatic Update → disable Download iOS Updates. This will prevent your iPhone from updating automatically.
I would recommend always keeping your iPhone fully updated as updates also add improvements to security.
