No matter what size I change the font to on my Apple email, the print is still too tiny to read. The Control + thing doesn't work. Didn't start until I upgraded to Ventura. :( :( :( VERY ANNOYING. Any help would be most appreciated!

Do you mean when you actually print an email or do you mean the size of the font in the email within the app Mail?
Are any other applications affected or only Mail? Are you using any multi-monitor managers? 3rd party optimizing software like CleanMyMac?
Have you tried it in Safemode to see if it's still a problem? If it works ok in safe mode it means you have something installed in your default login that is affecting it.

Yes, I did try in Safe Mode and it made no difference. I have added nothing new since upgrading to Ventura and I can't downgrade. VERY frustrating!
