Scribble vs Keyboard Apple Watch SE

Hi, I did buy Apple Watch to my kids. But When they try to send a message, we only have the option Scribble, not the keyboard option. They are using Apple Watch SE with all the new software install. If I do the same on my Apple Watch Ultra, I have the scribble and the keyboard when I swipe at the bottom
