You did not say which model you are using.

You can install no version of MacOS OLDER that the version it originally shipped with.

The 13-in shipped with Monterey 12.4,

the 14 and 16 with Ventura 13.2

There are ways you can use emulation to run an older version of macOS in a virtual machine under a newer version. There is some additional complexity, and performance may be less.
