I used to have a separate email signature for my various email accounts by going into Settings>Mail>Signature. You could choose "All Accounts" or "Per Account". I just noticed that with 16.3, that is no longer an option. Is there another way, other than manually putting in a signature?

So now I feel a bit dumb 🤦🏻♀️. It turns out I had forwarded an email from my Outlook account to my gmail account so that is why the signature was there. I actually didn't set up a signature on my gmail (which I just did!)
Yes, it is important that both mail accounts use Apple's Mails app for this function to work, as the setting is exclusively for the Mail app.
I still have the option to choose two signatures, in iOS 16.3.1. Do you have two or more email accounts set up?
Yes. But maybe it is because my outlook email for work uses Apple Mail app and my gmail uses the gmail app vs the Mail App?
