Multiple iWatch’s with one iPhone is this possible?
How can I keep my iWatch 7 and add my Ultra to my one iPhone 14 Max in essence giving me the ability to chose what iWatch to wear?

This is possible but you can only wear one watch at a time - which is what you want to do anyway. Here are the directions from the following Apple Support page:

Pair more than one Apple Watch
You can pair another Apple Watch in the same way you paired your first one. Bring your iPhone near your Apple Watch, wait for the Apple Watch pairing screen to appear on your iPhone, then tap Pair. Or follow these steps:
- Open the Apple Watch app on your iPhone.
- Tap My Watch, then tap All Watches at the top of the screen.
- Tap Add Watch, then follow the onscreen instructions.
