Unable to pair and update apple watch after carrying out a reset.

I reset my series 4 gps watch about 8 months ago after selling my iPhone and I've never used it since, until recently when I decided to sell it. I wanted to make sure it still worked so I tried to pair it as a family member to my wife's iPhone X. After around 30 seconds into the pairing process I get a message on the iPhone stating that the watch needs an update and must be "gps+cellular" to be able to update to iOS 7 and above! - then after a few seconds the phone goes through the process of unpairing the watch, and that's it - I can't get any further than this each time I try! Can anyone help please.

What you need

An Apple Watch Series 4 or later with cellular, or Apple Watch SE with cellular, with watchOS 7 or later.
An iPhone 6s or later with iOS 14 or later for the initial watch setup.
An Apple ID for yourself and one for the family member who will use the Apple Watch. Your Apple ID needs to have two-factor authentication turned on.
A Family Sharing group that
includes the person who will use the Apple Watch. You'll need to have
the role of organiser or parent/guardian to set up an Apple Watch for a
family member.

Hey thanks for your response. So my Series 4 watch is GPS only, does this mean I can no longer use it?

As of now the watch is a a reset state, so the way I'm reading your answer is that it has to be a cellular version, not GPS only. And obviously if I cannot update it, then I cannot pair it to an iPhone - is this correct?
