Great! Now lets assume that I don't yet have a mac Studio Monitor . . . would screen sharing with the macbook pro still work? I'm still getting a Mac Studio, but I won't have room to take the monitor with me when I travel, but I can take my 2019 macbook pro and mac studio.

Yes! Once you have the Mac Studio setup with a Display, Keyboard, Mouse or Trackpad, then you can use Screen Sharing. see > Share the screen of another Mac - Apple Support
I think it is small enough to pack the mac studio as I'd be using it as a desktop when at my dark site for several months. I won't use it at a cafe etc.
The reason for mac studio is the ability to get 128GB memory and more cpu/gpu cores. I will be processing extremely data-heavy astrophotography files. Only 1000 ten-second exposures to pre-process took 90min on my macbook pro with fans blowing full blast the whole time and temps hovering around 200-212F. I'll be processing more like 20000 ten-second exposures. Sometimes even more than that. Really I should build a Linux machine, but then I'm back to having a full tower-sized computer that is tough to travel with.
You don't need to have or use a Studio Monitor with the Mac Studio.
You can use most any aftermarket Display or even an HDMI TV.

The Mac Studio is a desktop computer not a portable.
Why would you get a Mac Studio instead of a M2 Pro or M2 Max MacBook Pro?

OK, now I'm getting a better picture of what you want to do.
Once you have Screen Sharing setup, then yes you should be able to turn on the Mac Studio and access it from your MacBook Pro via Screen Sharing.
Quick question. Does the facility or institution that you do this processing at or for, not have a monitor that you could use?

The dark site is my own land in the mountains, and taking a regular monitor is back to a space thing. No pun intended. . .or is it? A better monitor is better for final processing, but the laptop monitor is good enough to get things started, then do fine-tuning when I get back.

FWIW I have no problem Screen Sharing and controlling several Mac's over my local Ethernet network.
With that in mind and depending on the network services at the space thing... You might want to pre-test and then pack an Ethernet cable. That way you can hard connect the Mac Studio and MacBook Pro instead of using the space things... network for Screen Sharing.
No. Macs are not monitors.
HA! Of course not! A monitor is a monitor. I'm more asking if it's possible to "screen share" where I can see what the mac studio is doing via my macbook pro.
