I saw this the last time I bought a new Apple device. I want my iPad to completely back up to my computer but each time I try to execute a back up it switches to "back up your most important data on your iPad to iCloud." How do I defeat that?
I checked the archives, and it seems to be written for a previous version of the iPad operating systems.

Solution:
On the iDevice, go to AppleID => Device backups => iCloud backup and turn it on and then turn it off. You can ignore the warnings. Next time you plug in the device it will back up to your computer.
This requires ejecting and remounting the iPhone / iPad.
