Home App on Mac and iPhone show stereo pairs labeled Home Theater which was just recently set-up. But they don't operate as pairs and only work as individual HomePods. They also identify as Left and right per below Audio Settings image.
I just tried creating a stereo pair with two 1st gen Homepods. It worked for me. The user interface has changed a little in recent iOS updates. They are assigned to the same room and when I went to one of the Homepod settings I had the option to pair it.
Maybe try assigning both of yours to another room in case the Home app data is corrupted?
BTW - I couldn't find a way to unpair mine until I noticed an "Ungroup" option at the foot of the Settings window.
Maybe try changing them to Living Room and see if the Apple TV uses them for stereo output. My experience is that they don't require an AppleTV to work in stereo but maybe the latest HomepodOS update has broken that ((for Original Homepods)?

Yes they are.
Went threw a complete reset to factory state process. Reset my router and assigned to different room. Nothing seems to work.
Just changed them from Living Room to Entertainment Room. Also tried a custom name and that didn't work either.
