I don't have any monitors with a resolution greater than 4k. I don't have anything set to higher than 60hz. I have two monitors plugged in via thunderbolt to hdmi, and one hdmi to hdmi. If I unplug any 1, the Mac recognizes both of the others. When I have all 3 plugged in, the Mac only recognizes 2.
Only the M2 Pro Mac mini supports three displays.
The standard M1 and M2 Mac mini's only support two displays.

Then please tell us exactlly which monitors you have?
the brand and model numbers are critical to choosing alternate connection solutions
Also keep in mind that not all adapters and cables, including those supplied by display manufactures, play well with Mac's and multi display setups.
In addition to what @den.thed has mentioned, get certified adapters and cables and don't use generic cables. Certified cables are guaranteed to meet all the specifications and construction quality to meet the specifications of either HDMI or DisplayPort (VESA consortium).
