I have family sharing set up for myself and a family member for subscriptions and purchases. However, I just noticed I am not listed as the Organizer, but as Family Member even though the subscriptions are shared by me and I cannot make any changes. How do I fix this asap?

The only way to change the organizer for a family sharing group is to disband it and set up a new family from scratch. See Leave Family Sharing - Apple Support. Note you can only switch to a new family group once per year.
