Quicktime screen recording suddenly stops recording

I've never had an issue with QuickTime recording until recently. It will begin screen recording and after anywhere between 10-40 minutes it suddenly stops recording.

what location are you using as your "save to" location. I know that personally I have had issues with recordings stopping and / or not saving whenever I attempted to use anything other than "desktop" as my "save to" location.
