Thank you for using Apple Support Communities. We understand that you wish to downgrade your macOS version to a earlier version. Mainly because your printer isn’t compatible with the newest macOS version. Please do keep in mind that updates to contain various security upgrades. With that being said, there might be two possible ways to downgrade your macOS. One day is listed here: How to reinstall macOS - Apple Support

When you install macOS from Recovery, you get the current version of the most recently installed macOS, with some exceptions:
1.) On an Intel-based Mac, if you use Shift-Option-Command-R during startup, you might be offered the macOS that came with your Mac, or the closest version still available.
2.) If you just erased your entire startup disk, you might be offered an earlier compatible version of macOS.
If you're using an M1, your only option will most likely fall under the second option listed above. Another step does require you to have a bootable installer, steps can be found here: Create a bootable installer for macOS - Apple Support
