I want to erase my MAC (2017) and rebuild it. I want to clear data that is no longer used by removing outdated apps and associated files and start clean. How do I maintain my data that I want to keep like Contacts, etc. The backup information will be on icloud along with files I know I want.
How will this affect my ipad, iphone & watch?

You need to make a Time Machine backup of your boot drive so you can restore your user data and setting from it to your new system install.
Or you can use a Carbon Copy Cloner backup of the boot drive to another volume. TM is the better choice, however.
