Wayfinder on watch ultra
The settings of the new “Wayfinder” watch face are constantly reset. For some reason, the compass itself always turns on in extensions, which I don't need.

Have you made sure all your devices (Apple Watch and iPhone) are updated to the latest software version? For the Apple Watch that would be watchOS 9.2 and for the iPhone 16.2 is the current version.
Try changing the watch face and then changing it back to Wayfinder, see Change the watch face on your Apple Watch.
If you still see it resetting, you will want to reach out to Apple Support so they can look into this with you further. They can be reached by going to Get Support.
